Need help with cropping a picture?

I want to crop someones head from one picture and place it in another. I've tried using Gimp, but have found it to be quite complicated. I haven't tried Photoshop, but am assuming it would be just as difficult so could someone help me with step by step instructions or anything? Thanks.
